Set booking hours and peak pricing by weekday
Studios can set daily opening hours and choose which weekdays receive a peak surcharge, with the same rules across booking and calendar flows.

What changed
- Opening and closing times can now be configured independently for each weekday.
- Peak surcharges can be limited to selected weekdays and charge only the hours that overlap the peak window.
- Spaces, Sessions, booking recovery, admin pricing, calendars, checkout validation, platform routes, and Scale custom domains share the same rules.
- Studios that do not enable the new controls keep their existing global hours and all-days peak pricing.

- A studio can close earlier on weekends without creating a separate Booking Plan.
- One continuous booking can cross from off-peak into peak time and receive the correct blended total.
- Existing studio schedules and pricing remain unchanged until the owner chooses weekday-specific settings.
